Equipment

Ingredients
  

  • ~1 tablespoon olive oil
  • 1 bunch scallions
  • 1.5 cups finely chopped carrots from about 3 medium carrots
  • 4 cloves garlic - minced
  • 1 teaspoon smoked paprika
  • ½-1 teaspoon salt
  • pinch black pepper
  • ~6 oz block feta - crumbled
  • 1 cup vegetable or bone broth bone broth adds extra protein - use code avocadoskillet for 20% off the linked bone broth
  • 28 oz can crushed tomatoes
  • cup harissa
  • ½ cup dill - finely chopped
  • 3 cans chickpeas - drained

Instructions
 

  • Add oil to a skillet over medium heat along with the carrots, scallions and garlic. Cook for 5 minutes.
  • Add salt, pepper and paprika to the pan, toss to combine and cook for
  • Add all other remaining ingredients to the skillet and stir to combine. Partially mash about 25% of the chickpeas using a potato masher or jar. Bring to a simmer and cook for 15-20 minutes.
  • Divide out mixture and serve with toasted sourdough.
