Heat sesame oil over medium heat in a skillet that has a lid. Add scallion, garlic, ginger, and coriander. Cook for 5 minutes. Add mushrooms and cook for another 5 minutes.
Add broth, lime juice, soy sauce and honey. Bring to a gentle simmer over medium low heat and fold in the bok choy.
Nestle the cod in the broth and put the lid on the pot. Cook for 5-8 minutes, until cod flakes and/or reads 140 degrees with a meat thermometer. Cod cooks quickly and gets rubbery fast so be sure to not overcook it.
Serve cod and plenty of broth with rice or grain of choice and desired toppings.

Nutritional information is for ½ of the recipe with ½ of the broth which is why the protein is so high. You might have extra broth left over and can eat it on its own - it is delicious!
