One Pot Bone Broth Cod with Bok Choy

Equipment

Ingredients
  

  • 1 tablespoon sesame oil
  • 1 bunch scallions - finely chopped reserve some for topping
  • 4 cloves garlic - minced
  • 1 teaspoon grated ginger
  • ½ teaspoon ground coriander
  • pinch black pepper
  • 1 tablespoon soy sauce
  • salt to taste you may not need any as the broth and soy sauce are salty
  • juice from 1 lime
  • 1 cup sliced shiitake mushrooms
  • 1 teaspoon honey any sweetener works
  • 4 cups chicken bone broth vegetable broth also works
  • 2 heads baby bok choy - finely chopped
  • ¼ cup fresh chopped cilantro + more for topping
  • 2 filets cod

Optional Sides and toppings

  • chili oil
  • 2 servings cooked rice or grain of choice
  • chopped scallions
  • chopped cilantro

Instructions
 

  • Heat sesame oil over medium heat in a skillet that has a lid. Add scallion, garlic, ginger, and coriander. Cook for 5 minutes. Add mushrooms and cook for another 5 minutes.
  • Add broth, lime juice, soy sauce and honey. Bring to a gentle simmer over medium low heat and fold in the bok choy.
  • Nestle the cod in the broth and put the lid on the pot. Cook for 5-8 minutes, until cod flakes and/or reads 140 degrees with a meat thermometer. Cod cooks quickly and gets rubbery fast so be sure to not overcook it.
  • Serve cod and plenty of broth with rice or grain of choice and desired toppings.

Notes

Nutritional information is for ½ of the recipe with ½ of the broth which is why the protein is so high. You might have extra broth left over and can eat it on its own - it is delicious!
