Heat oil in a soup pot over medium heat. Add onions and cook for 5 minutes. Add garlic and cook for another 5 minutes.
Add all remaining ingredients to the pot except for the cottage cheese. Simmer for 15-20 minutes, until all the veggies are soft and tender.
Remove the parmesan rind from the soup. Add soup to a blender along with cottage cheese and blend until smooth. Alternatively you can blend with an immersion blender.
Serve and enjoy.
Notes
* A ring is the edge of parmesan. If you don't have a parmesan rind you can add some shredded parmesan at the end, this just provides additional flavor.
