Ingredients
  

Ingredients

  • 1-2 tablespoons olive oil
  • 1 small zucchini - sliced and quartered
  • 1 bell pepper - sliced
  • 2 servings shrimp
  • Pinch salt/pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cumin

Sauce

  • 2-4 tablespoons harissa
  • Juice from ½ lemon
  • 1-2 tablespoons honey
  • 1-2 tablespoons olive oil enough to thin the sauce
  • 1 garlic clove - minced or grated
  • Pinch salt/pepper

Other ingredients

  • ¼-1/2 cup cooked rice or grain of choice

Instructions
 

  • Mix together sauce and set aside.
  • Heat olive oil over medium heat in perfect pan. Add zucchini, bell pepper, salt/pepper and half of the cumin and paprika. Cook for 5-8 minutes, until veggies are softened. Push veggies to the side of the pan.
  • Add shrimp, garlic, a pinch salt and pepper, and the rest of the cumin and paprika. Cook shrimp for 90 seconds on each side.
  • Pour sauce over shrimp and veggies. Toss everything together and cook for another 1-2 more minutes, until everything is cooked through.
  • Serve shrimp and veggies with rice and dig in.
