Ingredients
  

Salad

  • 2 cans white beans - drained
  • 1 green bell pepper - diced
  • 1 red onion - finely chopped
  • 1 bunch parsley - finely chopped
  • 1 large tomato - diced
  • 1 small cucumber - diced
  • 1 tablespoon oregano
  • 1 tablespoon nutritional yeast
  • pinch salt
  • pinch pepper

Champagne Vinaigrette

  • ¼ cup champagne vinegar
  • ½ cup olive oil
  • juice from ½ lemon
  • 2 garlic cloves - minced
  • 1 tablespoon mustard
  • pinch salt
  • pinch pepper

Instructions
 

  • Mix together all dressing ingredients. Set aside.
  • Add all salad ingredients to a bowl and mix. Pour over dressing and mix again.

Notes

This makes about 4 servings of salad.
