Crispy Halloumi Salad with Champagne Vinaigrette

This Chopped Halloumi Salad with Champagne Vinaigrette is a delicious high fiber and high protein salad that is delicious on its own or with your favorite protein.

Equipment

Ingredients
  

seared halloumi

  • 1 block halloumi - sliced
  • 1 tablespoon olive oil can also use butter

filling ingredients

  • 2 cups finely chopped tomatoes from about 2 medium tomatoes
  • 1 medium cucumber - finely chopped
  • 1 large bell pepper - finely chopped
  • ½ cup finely chopped parsley
  • 1 medium red onion - finely chopped
  • 2 cans white beans - drained

Dressing

Instructions
 

  • Add all dressing ingredients to a jar or bowl, mix together until combined. Set aside.
  • Heat oil in a skillet over medium heat. Add halloumi to the skillet. Sear for 4-5 minutes on each side until golden brown. Let cool and then finely chop.
  • Add all salad ingredients including the halloumi to a big bowl. Toss together with dressing. Taste and add additional salt and pepper if desired. Serve and enjoy.

Notes

This makes a big salad that can be eaten as a side salad or as a main course.
Nutritional information is for ¼ of the recipe.
*To replace 1 teaspoon of za’atar, mix ½ teaspoon dried thyme, ¼ teaspoon sesame seeds, and ¼ teaspoon sumac (or use a pinch of paprika with a squeeze of lemon if you don’t have sumac).
