Crispy Halloumi Salad with Champagne Vinaigrette
This Chopped Halloumi Salad with Champagne Vinaigrette is a delicious high fiber and high protein salad that is delicious on its own or with your favorite protein.

seared halloumi
- 1 block halloumi - sliced
- 1 tablespoon olive oil can also use butter
filling ingredients
- 2 cups finely chopped tomatoes from about 2 medium tomatoes
- 1 medium cucumber - finely chopped
- 1 large bell pepper - finely chopped
- ½ cup finely chopped parsley
- 1 medium red onion - finely chopped
- 2 cans white beans - drained
Add all dressing ingredients to a jar or bowl, mix together until combined. Set aside.
Heat oil in a skillet over medium heat. Add halloumi to the skillet. Sear for 4-5 minutes on each side until golden brown. Let cool and then finely chop.
Add all salad ingredients including the halloumi to a big bowl. Toss together with dressing. Taste and add additional salt and pepper if desired. Serve and enjoy.
This makes a big salad that can be eaten as a side salad or as a main course.

*To replace 1 teaspoon of za’atar, mix ½ teaspoon dried thyme, ¼ teaspoon sesame seeds, and ¼ teaspoon sumac (or use a pinch of paprika with a squeeze of lemon if you don’t have sumac).
