Preheat oven to 425 degrees.
Add delicata squash to a nonstick sheet pan or one lined with parchment paper. Toss with oil and all other ingredients.
Bake fries for 25-40 minutes, flipping once halfway through. They will be browned and slightly crisp when done and will crisp more as they sit.
Air fryer instructions: Air fry fries at 400 degrees for 10-14 minutes, flipping once halfway through.
Serve fries with your favor sides, dip or protein.
