Instructions
Add potatoes and garlic to a pot of boiling water along with 1 tablespoon salt. Cook for 15-20 minutes, until both garlic and potatoes are fork tender. You may need to remove the garlic a few minutes before the potatoes.
Add garlic, milk and cottage cheese to a blender. Blend until smooth.
Add potatoes to a large bowl. Add in chives and pour over cottage cheese mixture. Add in pepper and a pinch of salt. Using a potato masher, mash together the potatoes with cottage cheese and chives until everything is combined. If needed, give the potatoes a mix with a spatula to get everything combined.
Serve mashed potatoes with butter if desired and dig in.
