Equipment

Ingredients
  

  • 10 yukon gold potatoes - diced
  • 8 cloves garlic
  • ½-1 teaspoon salt
  • 1 tablespoon salt
  • ½-1 teaspoon black pepper
  • ¼ cup milk of choice I used whole milk
  • 1 cup cottage cheese
  • 3 tablespoons chives - finely chopped + more for topping optional

Optional toppings

  • 2-4 tablespoons butter

Instructions
 

  • Add potatoes and garlic to a pot of boiling water along with 1 tablespoon salt. Cook for 15-20 minutes, until both garlic and potatoes are fork tender. You may need to remove the garlic a few minutes before the potatoes.
  • Add garlic, milk and cottage cheese to a blender. Blend until smooth.
  • Add potatoes to a large bowl. Add in chives and pour over cottage cheese mixture. Add in pepper and a pinch of salt. Using a potato masher, mash together the potatoes with cottage cheese and chives until everything is combined. If needed, give the potatoes a mix with a spatula to get everything combined.
  • Serve mashed potatoes with butter if desired and dig in.
