Ingredients
  

Salad

  • 1 8-9.5 oz package of ramen noodles - cooked
  • 2 heads baby bok choy - finely chopped
  • 2 carrots - julienned or finely sliced
  • 3 scallions - finely chopped
  • 1 cup cashews - roughly chopped or crushed
  • ½ cup cilantro - finely chopped
  • 1 package 12-16 ounce edamame - cooked and shelled you can buy pre shelled or shell them your self

Dressing

Instructions
 

  • Add all salad ingredients to a bowl.
  • Mix together dressing.
  • Pour dressing over salad and toss to combine.

Notes

This makes 3-4 servings of salad.
