Melt together chocolate and coconut oil. I melted mine in 3 30 second intervals in the microwave, stirring each time.
Addmelted chocolate and all other ingredients except for the strawberries to a blender or food processor. Blend until smooth. If you use a blender you are going to need to stop to scrape down the sides a few times. This recipe works better in a food processor but a blender also works.
Add mousse to a bowl and fold in strawberries. Refrigerate for 30 minutes or freeze for 15, until set. You can divide it out right away into the individual portions and refrigerate or just leave it in the bowl.
Add your favorite toppings and dig in.
Notes
This makes about enough for 3 6 oz portions. If you want to cut back on the calories just divide it into smaller portions.
