Barbecue Shredded Tofu Tacos

These Barbecue Shredded Tofu Tacos are a delicious and high protein taco recipe.

Ingredients
  

Slaw

  • 4 cups finely chopped red cabbage
  • ¼ cup mayo sub greek yogurt
  • juice from 1 lime
  • ½ cup finely chopped cilantro
  • salt to taste
  • black pepper to taste
  • ½ teaspoon garlic powder

Other ingredients

  • 5-6 Taco shells of choice
  • ¼ cup finely chopped green scallions - optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Add tofu to a sheet pan lined with parchment paper. Toss with a splash of oil and spices. Bake for 20-30 minutes.
  • While tofu is cooking, make your slaw. Add all slaw ingredients to a bowl and mix together until everything is fully coated.
  • Once your tofu is cooked add it to a skillet over low-medium heat. Mix together water, soy sauce and bbq sauce and pour over tofu. Stir to combine and cook for 5 minutes to let the tofu absorb.
  • Warm taco shells in the microwave or stove top. Top with tofu, slaw  and green scallions. Dig in and enjoy!
