  • Add potatoes to a pot of boiling water and boil for 20-30 minutes. The potatoes should be fork tender and easily smashed when done.
  • Preheat oven to 425 degrees.
  • Add oil, mustard and honey to a bowl and mix together until smooth.
  • Add potatoes to a sheet pan lined with parchment paper. Coat with the honey mustard mixture, I used a pastry brush to brush on the sauce. Coat potatoes in salt, pepper and garlic powder.
  • Bake potatoes for 30-40 minutes, until crisp.
  • Serve potatoes with your favorite protein or on their own.
