These Baked Honey Garlic Salmon Bites with Sweet Potato and Brussels Sprouts are a delicious way to enjoy salmon. It is easy to make and made on one sheet pan.

Sauce

Salmon

  • 2 filets wild caught salmon - cubed filets should be individually sized

vegetables

  • 1 tiny sweet potato about 2 cups worth
  • ~12 heads brussels sprouts - halved
  • 1 tablespoons oil divided
  • 1 teaspoon salt divided
  • 1 teaspoon garlic powder divided
  • pinch black pepper

optional other ingredients

  • cooked grain of choice
  • fresh chopped parsley for topping
  • sesame seeds for topping

Instructions
 

  • Preheat oven to 425 degrees.
  • Mix together honey garlic sauce. Add salmon bites to a bowl and pour sauce over them. Toss to combine and marinate for at least 15 minutes.
  • Add sweet potato and brussels to sheet pan and toss in oil, salt, pepper and garlic powder.
  • Roast veggies for 25 minutes.
  • Add salmon to the same sheet pan and roast for another 5-8 minutes, until cooked through.
  • Remove skin from salmon. Divide out salmon and veggies and serve with optional cooked grain of choice and toppings of choice.

Notes

If you don't want to buy both brussels and sweet potato you can use more of one or the other. I just love the flavor combination of both of them together.
