Ingredients
  

Green Beans

  • 1 lb green beans - cut in half with stems removed if needed
  • 1 tablespoon sesame oil
  • pinch salt/pepper

Dressing

Other salad ingredients

  • 2 ½ cups lentils
  • 2 medium/small red bell peppers - diced
  • 1 small red onion - diced
  • 1 bunch mint - finely chopped
  • ¾ cups cashews - roughly chopped or crushed

Instructions
 

  • Heat sesame oil in a large skillet over medium heat. Add green beans, salt and pepper and cook for 5 minutes. Add garlic and cook for another 5 minutes, or until green beans are cooked through.
  • Mix together dressing in a bowl.
  • Add dressing, green beans and the rest of the salad ingredients to a large bowl. Toss to combine and dig in.

Notes

This makes 3-5 servings of salad depending on how hungry you are.
