I get a lot of questions on how I stay full on just a smoothie for breakfast. Well, the answer is I balance my smoothies with protein, fiber and fats so they keep me full for hours. I have come up with the perfect combination of ingredients to make my morning smoothies not only taste good, but be extremely satisfying.

This vegan pumpkin pie smoothie is one of my go to smoothies in the fall. It has veggies from the pumpkin and cauliflower. Cauliflower is a great veggie to sneak in your smoothies because you can not taste it in smoothies. For healthy fats this smoothie has avocado, nut butter and a variety of seeds. I also like including seeds in my smoothies because they are also packed with vitamins and protein. This smoothie will leave you feeling energized and satisfied.

This pumpkin pie smoothie is easy to make - like all smoothies. That is another reason why I love having smoothies for breakfast, they take 5 minutes to make. I always make a double serving so I only have to make breakfast half of the time.

How do I store the extra smoothie?

Making a double batch of smoothie is a game changer. I store the extra smoothie in a mason jar in my fridge overnight. You can also freeze the smoothie in a mason jar and thaw it out when you are ready to eat it.

This makes 2 servings of smoothie, store the extra in the fridge for up to 24 hours

  • 1 cup pumpkin puree
  • 1  1/2 frozen bananas
  • 2 cups frozen cauliflower
  • 1/2 avocado
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 1 tbsp almond butter

  • 1 tbsp hemp seeds
  • 1 tbsp flax seeds
  • 1 tbsp chia seeds
  • 1- 1 1/2 cups water (depending on how thick you like your smoothie)

Instructions

  1. Add all ingredients to a blender and blend until smooth. Top with your favorite toppings, I love cacao nibs and granola.
