Vegan Peach Cobbler Oatmeal Bars

I can not stop eating stone fruits. Seriously, I think I have at least peach or plum every day. Although I love snacking on them and eating them plain, they are also amazing to bake with. Peaches are great in baking recipes because they are so naturally sweet, so they don't need much done to them to make a great dessert. These Vegan Peach Cobbler Oatmeal Bars are a perfect way to bake with peaches!

These vegan peach cobbler bars are so healthy but you would never know it. They are packed with fiber from the chia seeds, oats and oat flour. Although these bars do have minimal sugar, the almond butter helps balance it out and you will not feel sluggish after eating one. The chia jam further cuts down on the sugar because chia seeds thicken the jam versus a ton of sugar like normal jams. I would even go as far as to say these could be eaten for breakfast!

As per usual with my baking, this recipe is super easy to make. The crust is made in one bowl with minimal ingredients and the jam is made on the stovetop in about 10 minutes.

Peach Jam

  • 2 cups peaches - diced (3-4 peaches)
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup or sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch or arrowroot starch

Crust

  • 1 1/2 cups oat flour
  • 1 cup oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond butter
  • 3-4 tbsp vegan milk

Instructions

  1. Preheat oven to 350 degrees.
  2. Add peaches to a saucepan over medium-low heat and partially mash using a potato masher or fork. Add all remaining ingredients and stir to combine. Cook for about 10 minutes until peaches have started to break down. Remove from heat and let cool and thicken for 5 minutes.
  3. Add all crust ingredients to a bowl and mix until fully combined. You may need to use your hands to get it really combined.
  4. Press about 1/2 of the crust into a lined 8x8 baking dish. Pour jam on top. Crumble the remaining crust on top of the jam.
  5. Bake crumble for 25-30 minutes. Let cool for a full hour in the refrigerator before serving, this lets the jam fully set.
