Pea Pesto Pasta

Cooking is therapy for me and I love it - hence the blog. But my weeks are hectic and sometimes I need a super quick no fuss meal. Pesto fits the bill for this!

I make a lot of pesto recipes but this pea pesto pasta is one of my favorites. Peas give this pesto a unique flavor, plus it is a great option for people with nut sensitivities. Personally I love dill in this recipe, but if you don't like dill feel free to swap it out. For those of you who are oil free, just swap out the oil for broth.

Of course being a pesto recipe, this recipe is easy as can be. Just add all of the ingredients to a blender and blend. Even though its simple this recipe is packed with protein and flavor. Pair it with a high protein pasta for an extra nutrient punch!

Pesto

  • 1 cup cooked peas
  • 1/4 cup olive oil (sub broth if oil free)
  • 1 garlic clove
  • 3 tbsp nutritional yeast
  • 1/2 cup dill (or sub any herb you like)
  • juice from 1/2 lemon
  • salt/pepper to taste

+ cooked pasta of choice

Instructions

  1. Add all ingredients to a food processor and blend until creamy. Mix pesto with pasta of choice.
