One Sheet Pan Tofu Fajitas (vegan)

These one sheet pan tofu fajitas are a delicious and easy to make tofu recipe.

Ingredients

This makes 2-3 servings (about 6-7 tacos)

Fajitas

  • 1 block tofu - pressed and cubed
  • 1 small red onion - sliced
  • 1 green bell pepper - sliced
  • 1 orange bell pepper - sliced
  • 1 tsp maple syrup
  • 2 tsp cumin
  • 1 tsp oregano
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper

Optional toppings

  • freshly chopped cilantro
  • salsa
  • sliced avocado
  • 6-8 taco shells (warmed in the microwave for 30 seconds)

Instructions

  1. Preheat oven to 425 degrees.
  2. Add onion, tofu and bell peppers to a sheet pan lined with parchment paper. Lightly drizzle with oil of choice and maple syrup.
  3. Mix together spices in a small bowl and sprinkle over tofu and veggies. Toss tofu and veggies with spices until evenly coated.
  4. Bake tofu and veggies for 30-35 minutes.
  5. Add fajita filling to warmed taco shells. Add your favorite toppings and dig in.
