I see a lot of vegan caesar salad recipes that use chickpeas in place of croutons. No shame - because I love chickpeas but sometimes you actually want real croutons.

I created this Vegan Lentil Caesar Salad with Easy Tahini Dressing as a vegan and healthier twist on your standard caesar salad. My boyfriend is a "real" caesar salad lover and he gave it his stamp of approval. It only takes about 20 minutes and makes several servings so it is a perfect quick meal prep option.

How to make this vegan caesar salad?

This vegan caesar salad is super easy to make! If you prep your lentils ahead of time it could take you 15 minutes to make. The dressing is made in your blender with simple ingredients.

  1. Make your croutons by cubing sourdough, coating it in spices and roasting it.
  2. Chop your veggies.
  3. Make your easy tahini dressing by blending the ingredients until smooth.
  4. Mix your veggies, lentils, croutons and dressing. Dig in!

Ingredients

This makes 3-4 servings of salad

Croutons (you can sub premade croutons)

  • ~4 cups cubed sourdough bread (from 4-5 slices of bread, can sub another bread)
  • 1/4 tsp garlic powder
  • salt/pepper to taste

Salad

  • 1 head romaine lettuce - finely chopped
  • 1 carrot - shredded or finely chopped
  • 3 stalks celery - finely chopped
  • 1 cup cooked french, brown or green lentils (can used canned)
  • 1/2 cup hemp seeds (optional for extra protein)

Dressing

  • 1/3 cup tahini
  • 1/3 cup water
  • 1 tbsp nutritional yeast
  • 1 tsp capers
  • 1 tbsp soy sauce or aminos
  • 1 tsp maple syrup
  • 1 tsp dijon mustard
  • 1/4 cup parsley
  • juice from 1/2 lemon
  • salt/pepper to taste

Instructions

  1. Preheat oven to 350 degrees. Lightly coat bread cubes in oil and spices. Roast for 10-15 minutes or until crispy.
  2. Blend your dressing ingredients in a blender or processor until smooth.
  3. Toss together salad, dressing and croutons.
