Zucchini pizza with basil and lemon

This Zucchini pizza with basil and lemon is a delicious vegan pizza recipe.

Ingredients
  

  • ~½ zucchini - finely sliced or use a mandoline
  • ¼ cup basil - finely chopped
  • vegan feta I like Violife or vegan/regular cheese of choice
  • pasta/pizza sauce I like Rao's
  • 1 pizza crust of choice I like banza
  • salt/pepper to taste
  • red pepper flakes - optional to taste
  • Lemon juice to taste I used juice from ¼ lemon

Instructions
 

  • Preheat oven according to pizza crust instructions.
  • Top pizza crust with tomato sauce. Add zucchini slices to pizza in a thin layer. Sprinkle salt/pepper on pizza to taste. Sprinkle basil over pizza. Lastly crumble cheese over pizza.
  • Cook pizza according to instructions.
  • Top cooked pizza with a light coating of red pepper flakes and lemon juice. Let cool and enjoy.

Notes

This makes enough for 1 pizza, feel free to double.
