Summer Sesame Honey Shrimp Noodles

Sauce
- 1 teaspoon grated ginger
- 2 ½ tablespoons tahini
- 1 tablespoon sriracha
- 1 ½ tablespoons honey
- 3 tablespoons soy sauce can use tamari for gluten free option
- juice from 1 lime
- 2 tablespoons water or broth to thin the sauce, broth is more flavorful but water works just fine
Veggies
- 4 cloves garlic - minced
- 1 small red onion - finely sliced
- 1 zucchini - halved and finely sliced
- 1 cup finely sliced carrots this was from 4 smallish bunched carrots for me
- ½ cup finely chopped cilantro
Optional toppings
- sesame seeds
- chili oil i mostly added this for aesthetics, the recipe is spicy enough
- additional fresh chopped cilantro
Whisk together all sauce ingredients, set aside,
Add shrimp to a bowl and toss with seasonings.
Heat sesame oil in a skillet over medium heat. Add shrimp and sear for 90 seconds each side. Remove shrimp from the pan and set aside.
If needed, add a splash more of oil to the pan and add red onions. Cook for 5 minutes. Add garlic, zucchini, carrots and cilantro. Cook for 5-8 more minutes, until everything is nice and soft.
Turn heat to low and add cooked shrimp and noodles to the pan. Pour over the sauce and toss to combined. Cook for ~2 minutes, until everything is nice and heated through.
Divide out noodles and serve with your favorite toppings.
I recommend using a mandoline to get the veggies finely sliced for this recipe
