Course Dessert, Snack
Cuisine American, vegetarian
- 1 heaping cup diced strawberries
- ½ teaspoon vanilla extract
- ¾ cup plain greek or skyr yogurt can sub coconut yogurt for vegan
- ½ tablespoon matcha use code avocadoskillet for 20% off my favorite matcha
- 1 tablespoon honey
- 1 ½ cups dark chocolate chips
- ¼ teaspoon coconut oil optional but does help chocolate to melt easier
Add matcha, vanilla, yogurt and honey to a bowl. Mix until smooth. Fold in strawberries.
Spoon* out mixture onto a sheet pan lined with parchment paper (a plate or other flat surface also works) into 6 evenly sized clusters. Freeze for 1-2 hours or overnight, until hardened. I have found that dairy yogurt takes a full 2 hours to freeze while vegan can freeze in closer to an hour.
Melt together chocolate and coconut oil. I melted mine for 3 30 second intervals in the microwave.
Dunk each cluster in dark chocolate. Sprinkle over the rest of the flaky salt. Freeze again for 10-15 minutes, until set. Dig in and enjoy!**
These clusters can be stored in your fridge for about 5 days or the freezer for months.
*I used an ice cream scooper.
**If you want your clusters to have a softer inner texture instead of a frozen texture let them sit out for 10 minutes.
