Stovetop Pumpkin Protein Oatmeal

  • 1 tablespoon nut butter
  • granola
  • ¼ cup berry of choice

Instructions
 

  • Add milk, pumpkin, oats and pumpkin spice to a small pot or sauce pan. Bring to a simmer, add chia seeds and cook for about 4 minutes, stirring often, until thickened.
  • Turn off heat and stir in potein powder. Stir until combined, for about 1 minute. Depending on the type of protein powder you use you may need 1-2 more tablespoons of water. Pea protein tends to absorb more liquid than whey.
  • Remove oatmeal from heat and let cool for 2 minutes.
  • Serve oatmeal with almond butter, berries and granola or desired toppings of choice. Dig in and enjoy!

Notes

I did not need to add any sweetener because my protein powder is sweet enough on its own. If you want this sweeter feel free to add a splash of maple syrup.
This makes 1 serving of oatmeal.
