Add dates to a sheet pan lined with parchment paper or silicone. I did 5 rows of 3 dates. Add another piece of parchment paper to the sheet pan and flatten the dates.
Top dates with apple slices. I did about 5 slices of apples per row of dates.
Melt together chocolate and coconut oil. I melted mine at 3 30 seconds intervals in the microwave, stirring after each microwave session.
Pour chocolate over dates and apples. Make sure chocolate goes in between all the grooves of the apples and dates so everything sticks together.
Refrigerate date bark for 15 minutes, until set. Slice and enjoy.

*If you have a coconut allergy you can sub another oil. This helps the chocolate to melt easier and prevents it from seizing.Nutrition information is for 1/9 of the recipe.
