Equipment

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion - finely chopped
  • 4-6 cloves garlic - minced
  • 3 tablespoons tomato paste
  • ¼-1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • 1 tablespoon calabrian chili peppers can sub 1-2 teaspoons of chili flakes
  • ½ cup finely chopped parsley or basil
  • 28 oz can crushed tomatoes
  • 3 tablespoons balsamic vinegar
  • ¾ cup full fat coconut milk (from a can) OR heavy cream macros are better on coconut milk but both work and are delicious
  • ½ cup grated parmesan
  • ½ cup chicken bone broth or vegetable broth can also sub water but will be less flavorful
  • 3 cans butter beans - drained 13-15 oz size cans/jars/boxes, I love the linked beans
  • 2-3 handfuls fresh or frozen spinach

Optional toppings and sides

Instructions

  • Heat oil in a skillet over medium heat.
Add onions and cook for 8-10 minutes, until browned. Add garlic, salt, pepper, thyme, rosemary, oregano, chili pepper and tomato paste. Cook for 3 minutes, until fragrant.
  • Add all remaining ingredients except for the spinach. Stir to combine and bring to a simmer. Cook for 15-20 minutes. The longer you cook it the more flavorful it will become but 15 minutes is sufficient.
  • Turn off heat and fold in spinach. Divide out and serve.
