6-8taco shells of choice
Instructions
Heat oil or butter over medium heat. Add onions. Cook for 10 minutes. After 10 minutes add sugar and salt. Continue to cook for 20-25 more minutes, until onions are caramelized.
Preheat oven to 425 degrees.
Add all remaining ingredients to the pan except for the beans, cheese and tomato paste. Cook for 5 minutes. Add beans and tomato paste and cook for an additional 5 more minutes.
Partially mash the bean mixture until it gets paste like.
Heat taco shells for 15-30 seconds in the microwave until warm and softened.
Add 2 tablespoons of filling to the shells and top with cheese. Fold tacos over and flip so the filling side is on the top. This is crucial to keep the tacos closed.
Cook tacos for 20-30 minutes, until crisp.
Serve tacos with your favorite toppings and sides.
Notes
This makes 6-8 taco shells depending on how big your shells are. Mine made 7 tacos.
