salad ingredients
- 2 medium cucumbers - halved and finely sliced**
- ~1.5 cups cooked and shelled edamame measure out the edamame once shelled
- 1 bunch scallions - finely sliced
- ½ cup chopped cashews I used a heaping half cup so slightly more than ½ cup
This makes about 4-5 servings of a side salad, depending on how hungry you are. I like to pair this salad with salmon but it goes well with any protein.
**I HIGHLY recommend using a mandoline for this recipe! It is an inexpensive kitchen tool and allows all the cucumbers to get evenly and very finely sliced. The mandoline I use is linked.
