Crispy Baked Eggplant Parmesan Fries

These Crispy Baked Eggplant Parmesan Fries are a delicious and healthy vegetarian side or snack

Ingredients
  

  • 3 tiny eggplants or 1 large - cut into fries
  • 2 tablespoons neutral oil avocado, olive, etc
  • 1 ½ tablespoons arrowroot starch or corn starch
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • cup grated parmesan use vegan if desired
  • + ¼-1/2 cup marinara sauce for dipping

Instructions
 

  • Preheat oven to 425 degrees.
  • Add fries to a bowl and toss with all ingredients. If you are having trouble getting the parmesan to stick add a touch more oil.
  • Add fries to a sheet pan lined with parchment paper. Bake for 25-35 minutes, until desired level of crispness has been achieved.
  • Serve fries with marinara sauce as dipping sauce and enjoy.

This makes 2-4 servings of fries
