These Chipotle Chicken Thighs with Cilantro Lime Sauce pack 57 grams of protein and 22 grams of fiber per serving and come together in just 30 minutes with only one pot.
Add all avocado sauce ingredients to a food processor or blender. Blend until smooth. Set aside.
Pat chicken thighs dry and coat with seasoning on both sides.
Heat oil on a skillet over medium high heat. Sear chicken for 7-8 minutes on each side, until browned and cooked through. Chicken thighs are hard to overcook and actually taste better when cooked to about 175-180 degrees.
Remove chicken from skillet once cooked and lower heat to medium. Add red onion and bell pepper. Cook for 7 minutes. Add garlic and seasoning, cook for another 3 minutes.Add black beans, toss to combine and cook for 5 more minutes.
Slice chicken thighs. Form bowls with black beans and chicken and top off with sauce.
