Ingredients
  

Chicken

  • ~1.25 lb boneless + skinless chicken thighs Should be 4 chicken thighs total
  • 1-1 ¼ teaspoons salt
  • ½ teaspoon chipotle powder
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • black pepper to taste
  • 1-2 tablespoons avocado oil for cooking, can sub olive oil but avocado oil is better for searing

Beans

Cilantro lime Avocado Sauce

  • 1 small avocado - peeled and seed removed
  • ¼ cup fresh chopped cilantro
  • cup greek yogurt
  • 2-4 tablespoons water to thin adjust to your thickness prefernce
  • juice from 1 lime about ¼ cup juice
  • 1 clove garlic
  • black pepper to taste
  • ¼-1/2 teaspoon salt

Instructions
 

  • Add all avocado sauce ingredients to a food processor or blender. Blend until smooth. Set aside.
  • Pat chicken thighs dry and coat with seasoning on both sides.
  • Heat oil on a skillet over medium high heat. Sear chicken for 7-8 minutes on each side, until browned and cooked through. Chicken thighs are hard to overcook and actually taste better when cooked to about 175-180 degrees.
  • Remove chicken from skillet once cooked and lower heat to medium. Add red onion and bell pepper. Cook for 7 minutes. Add garlic and seasoning, cook for another 3 minutes.
    Add black beans, toss to combine and cook for 5 more minutes.
  • Slice chicken thighs. Form bowls with black beans and chicken and top off with sauce.

Notes

If you want to make this a true one pot recipe you can sub in the avocado sauce for store bought guacamole or another store bought sauce.
