Carrot quinoa fritters with cashew aioli

These Carrot quinoa fritters with cashew aioli are a delicious way to eat carrots.

Ingredients
  

  • Fritters
  • 2 cups shredded carrots
  • 3 scallions - finely chopped
  • ½ cup basil - finely chopped
  • 1 cup quinoa
  • ½ cup panko bread crumbs use gluten free if needed
  • 1 tablespoon nutritional yeast
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • black pepper to taste
  • 2 eggs
  • Cashew Aioli optional
  • 1 cup cashews soaked for 4 hours or 15 minutes in very hot water if you don't have a high powered blender
  • ½ cup water
  • 2 cloves garlic
  • 1 teaspoon mustard
  • black pepper to taste
  • ¼-1/2 teaspoon salt to taste
  • juice from 1 lemon
  • 1 tablespoon nutritional yeast

Instructions
 

  • Preheat oven to 425 degrees.
  • Add all fritter ingredients to a bowl and mix to combine.
  • Form 9-10 evenly sized fritters (using 3-4 tablespoons of dough) on a sheet pan lined with parchment paper.
  • Bake fritters for 30-35 minutes, flipping once halfway through.
  • Add all aioli ingredients to a blender and blend until smooth.
  • Serve fritters with aioli and your favorite protein or salad.

Notes

This makes 2-4 servings of fritters.
