1
large
apple - diced
I used/recommend honey crisp
1
tablespoon
butter
can sub coconut or olive oil but I like the flavor butter adds
2
tablespoons
rolled oats
1-2
teaspoons
coconut sugar
you can leave off the sugar but it does add a nice subtle sweetness. Any sweetener works here including maple syrup.
½
teaspoon
pumpkin spice
can sub cinnamon
½
cup
greek/skyr yogurt
can sub any yogurt, I used plain but vanilla also works
optional toppings
1
teaspoon
bee pollen
1
teaspoon
fresh chopped mint
Instructions
Heat butter over medium heat. Add apple, oats, coconut sugar and pumpkin spice. Toss until the apple pieces are evenly coated.
Cook for 5-8 minutes, until apples have softened.
Add yogurt to bowl and top with apple oat mixture. Add additional toppings if desired and dig in.
Notes
If you want to lower the calories for this you can use less yogurt and less apple. Serving size is for the entire recipe.
