Dill Pickle Smashed Potatoes

These Dill Pickle Smashed Potatoes are a delicious and easy to make side dish.

Ingredients
  

  • 1 pound small red or yellow potatoes this is about 8 small potatoes
  • 2 cups pickle juice
  • 3-5 cups water (just enough to cover the potatoes)
  • ½-1 teaspoon salt
  • ½ teaspoon garlic powder
  • black pepper to taste
  • 1 tablespoon avocado or olive oil
  • 1 tablespoon fresh chopped dill optional

Instructions
 

  • Preheat oven to 425 degrees.
  • Add pickle juice and water to a pot and bring to a boil. Add potatoes and boil for 15-20 minutes, until they are soft enough to smash.
  • Add potatoes to a nonstick sheet pan or one lined with parchment paper. Using the bottom of a jar or glass, smash each potato.
  • Coat potatoes in oil, garlic powder, salt and pepper. Bake for 30-35 minutes, until crisp.
  • Let potatoes cool, top with dill (if using) and dig in.
