Ingredients
  

  • 2 medium spotty ripe bananas
  • 4 large eggs
  • ¾ cup + 1 tablespoon oats
  • butter or oil for cooking

optional add ins and toppings

  • pinch cinnamon I didn't add any
  • pinch sea salt I didn't add any
  • maple syrup
  • additional fresh chopped bananas or fruit of choice

Instructions
 

  • Add bananas, eggs and oats to a blender. Blend until smooth. Let batter rest for 5 minutes.
  • Add butter or oil to a skillet over medium heat (I used about 1 tablespoon butter). Add ¼ cup batter to the skillet and cook for 2-3 minutes each side, until golden. The pancakes will bubble once ready to flip. Repeat for every pancake until you have 8-9 pancakes.
  • Serve pancakes with your favorite toppings and dig in
