It feels like summer here in DC, and to me that means all of the amazing summer produce. Zucchini is one of my favorite summer vegetables. Normally I stick to roasting or sauteing it, but I wanted to mix it up. These vegan zucchini fritters are my newest zucchini creation.
These fritters are vegan and gluten free. They are also fuss free and made in one bowl with minimal ingredients. Baking these fritters is so much easier than pan frying in my opinion, plus you can use less oil then.
I used chickpea flour to add some extra protein to the recipe, and that combined with the yogurt sauce makes these fritters a satisfying meal. This was my first time using chickpea flour but I love the texture and flavor it added. I haven't tested any subs but you may be able to get away with all purpose flour. Corn and basil add the best fresh summer flavor to these fritters. If you are grain free the corn can be left out!
