I have been trying to cut back on sugar, and I feel so much better eating less of it. Don't get me wrong, I still have a dessert every day. But, when I have full batches of desserts laying around it is easy to eating 4 cookies in one day and then feel like crap after. I love making single serve desserts because there are no leftovers, i.e. I can't eat multiple servings. This vegan single serve banana bread is my latest single serve creation.

This single serve banana bread is made with 7 ingredients and in 20 minutes. It is also made in the dish it is cooked in so there is minimal clean up. It is the perfect quick and easy treat. You simply have to mix together all the ingredients in an oven safe dish and then bake for 20 minutes. Simple as that.

This banana bread is healthy for you, and made with wholesome ingredients. I used minimal sugar in the form of maple syrup to bring out the flavor. You could leave out the sweetener entirely if you would like to make this dessert sugar free. This vegan single serve banana bread is also gluten free and nut free making it accessible to most dietary restrictions.

I ate this recipe as a dessert, but it is also healthy enough to be eaten as breakfast or a snack. You could share it with a loved one - but trust me you won't want to. My boyfriend wanted his own as soon as he saw me eat mine so I made an extra serving.

  • 1/2 banana - mashed
  • 1/2 cup oat flour
  • 2 tsp maple syrup
  • 1/4 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup vegan milk
  • 1 tsp chia seeds

+ chocolate chips for topping

Instructions

  1. Preheat oven to 375 degrees.
  2. Add all ingredients to an oven safe dish. Mix until fully combined. Top with chocolate chips.
  3. Bake for 20 minutes. Let cool for 5 minutes and dig in.
