Vegan Cinnamon Roll Truffles

Cinnamon rolls are one of my favorite desserts, however they are incredibly time consuming to make. These vegan cinnamon roll truffles are a good substitute when you are craving cinnamon but do not want to make cinnamon rolls!

These truffles are vegan and gluten free per usual. They are also no bake and made in one bowl and your freezer. All total they only take about 20 minutes and minimal effort to make!

These truffles are also made with good for you ingredients like almond butter, almond flour and oat flour. They won't spike your blood sugar as much as a typical dessert and are even kind of good for you!

Ingredients

Truffles

  • 1/2 cup almond butter
  • 1/3 cup coconut sugar
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 tbsp cinnamon
  • 1 cup oat flour
  • 1/4 cup almond flour

Chocolate Coating

  • 1 cup chocolate
  • 1 tsp coconut oil

Instructions

  1. In a large bowl mix together all of your truffle ingredients. Roll dough into evenly sized balls and freeze for 10 minutes.
  2. Melt together chocolate and coconut oil. Dip truffles into chocolate until evenly coated. Freeze for 10 more minutes.
  3. Store these truffles in the freezer for months or the fridge for a few days.
