Cheesy Broccoli Pasta

Broccoli and cheese is such a classic combination. I don't know why it tastes so good together but it does. However cheese never made me feel good, and ethically I don't consume it anymore. This cheesy broccoli pasta is perfect for when you want a cheesy dairy free pasta.

This cheesy broccoli pasta is so healthy for you and so easy to make. The sauce is made from vegetables and packed with vitamin A and fiber. Tahini and nutritional yeast add some protein but you can use chickpea pasta for an extra protein punch. This pasta is also so easy to make, it takes less than 20 minutes to come together. Plus you can use ingredients you already have on hand!

This pasta is so delicious it is a recipe I will have on rotation from now on. It is so flavorful despite being made with simple ingredients. In addition, since it is dairy free it won't leave you feeling heavy and bloated after.

Ingredients

This makes about 3-4 servings depending on how much pasta you make

Broccoli

  • 1 head broccoli - cut into small florets
  • salt/pepper to taste

Sauce

  • 1 cup diced sweet potato
  • 1 cup diced carrots
  • 1/2 cup plant milk
  • 1/4 cup nutritional yeast
  • 1/2 tbsp soy sauce or aminos
  • 1 tbsp apple cider vinegar
  • 3 tbsp tahini
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • salt/pepper to taste

+ 1 box cooked pasta of choice, I recommend macaroni

Instructions

  1. Bring water to a boil. Add carrots and sweet potatoes and boil for 10 minutes.
  2. Add broccoli to a skillet with oil over medium heat. Cook for 10 minutes or until broccoli starts to soften. I covered my pan for the last minute or so to get the broccoli cooked through. Set aside
  3. Add cooked carrots and sweet potato to a blender along with the remaining ingredients to a blender. Blend until smooth.
  4. Mix pasta sauce with cooked pasta and broccoli.
