I had the best burrito when I was in Costa Rica this year. It was filled with fresh veggies and had the perfect amount of crisp. Since then I have been perfecting the crispy burrito and I think I nailed it. These Vegan Black Bean Sweet Potato Burritos with avocado are made in one skillet and only require 20 minutes of baking so they are pretty easy.

This makes enough filling for 2-3 burritos

Filling

  • 1 small onion - finely chopped
  • 3 cloves garlic - minced
  • 1 small or 1/2 medium sweet potato finely cubed
  • juice from 1 lime
  • 1/2 cup salsa
  • 1/2 cup finely chopped cilantro
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • salt/pepper to taste
  • 1 can black beans

+ tortillas, avocado, and vegan cheese. How much you need will depend on how many burritos you decide to make. I filled each burrito with 1/2 avocado.

Instructions

  1. Preheat oven to 400 degrees. If you have an air fryer you can skip this step.
  2. Heat oil in medium heat in a skillet. Add onion and garlic and saute for 5 minutes. Add all remaining ingredients except for the black beans to skillet and cook for 15-20 more minutes or until sweet potatoes are fork tender, tossing occasionally.  Add black beans in the last 5 minutes of cooking.
  3. Once filling is done cooking, microwave tortillas for 30 seconds each.  Place tortillas on a lined sheet pan. Spoon filling into tortilla and top with avocado and vegan cheese. Roll burritos (I recommend watching a youtube video on how to do this). Bake for 20 minutes, or air fry at 400 degrees for 5-7 minutes. Let burritos cool for at least 10 minutes as they will be very hot. I dipped mine in salsa.
