Tofu Steaks

Every vegan or vegetarian has had someone overly concerned about their protein intake. Not only is it rude for someone to make comments about your food like this, it is also totally uncalled for because it is so easy to get protein as a vegan. Tofu is a complete protein and it is one of my favorites.

These tofu steaks are a delicious way to take advantage of tofu's health benefits. The key to getting the tofu so flavorful is marinating it for at least an hour. This lets the flavors fully seep into the tofu. I paired the tofu with a basil chimichurri sauce but you can leave it off if you are light on time.

This tofu pairs great with simply sauteed mushrooms but this is recipe is customizable so make your favorite side! It would also go great with broccoli or in a salad. This is what is great about tofu, it is so versatile.

Ingredients

Tofu

  • 1/2 cup soy sauce
  • 1/4 cup apple cider or other culinary vinegar
  • 1/2 tsp liquid smoke (optional but adds a nice flavor)
  • 1 tbsp maple syrup
  • 1 tbsp mustard
  • 2 garlic cloves - minced
  • 1 block firm or extra firm tofu - pressed to drain liquid and cut into 4 evenly sized strips

Basil Chimichurri Sauce

  • 1/4 cup culinary vinegar (ie apple cider or white wine)
  • 1 shallot
  • 1/2 cup basil
  • 1/2 cup parsley
  • 1/4 cup olive oil
  • 1 tsp maple syrup
  • pinch pepper
  • 1/4 tsp salt

Mushrooms

  • 2 cups mushrooms - roughly chopped
  • 1 tbsp soy sauce
  • 1 tbsp balsamic

+ optional sides, I sauteed some mushrooms in soy sauce and balsamic until soft

Instructions

  1. In a large bowl mix together the first 5 tofu ingredients. Add tofu to a container or bowl and pour marinade over tofu. Make sure tofu is evenly coated and let sit for 1-24 hours.
  2. Preheat oven to 425 degrees. Add tofu to a lined sheet pan and roast for 30 minutes.
  3. While tofu is cooking make your mushrooms. Heat oil in a skillet over medium heat. Add mushrooms, soy sauce and balsamic. Cook for about 10 minutes or until softened. Set aside.
  4. Blend together chimichurri ingredients until smooth.
  5. Top tofu with chimichurri and serve with mushrooms or sides of choice.
