Vegan Pumpkin Cookie Dough Truffles

I have been wanting to make truffles for awhile, and clearly since it was fall I had to put pumpkin in them. These vegan pumpkin cookie dough truffles are delicious and require less than 10 ingredients to make. Be forewarned although they are incredibly easy to make they are messy. But the mess is worth it.

These pumpkin truffles are vegan and gluten free. They are also refined sugar free and made with healthier overall ingredients. I like to design my desserts so they don't give me a huge blood sugar crash. This is done by using whole grain flours like oat, and healthy fats like almond butter and almond flour. Pumpkin also adds a little extra fiber and vitamins.

These truffles are super easy to make, you don't even need your oven. You start by making the dough and then rolling it into balls. Then you freeze the balls and melt your chocolate. Next dip the balls in chocolate again and freeze. Although this recipe is messy, it is easy and perfect if you don't want to turn on your oven.

This makes about 10 truffles

Truffle filling

  • 1/4 cup almond butter
  • 1/4 cup pumpkin puree (not pumpkin pie mix)
  • 1 cup + 1 tbsp oat flour
  • 1/4 cup almond flour
  • 1 tsp pumpkin spice
  • 1 tsp vanilla extract
  • 1/3 cup maple syrup
  • 1 cup chocolate chips
  • 1 tsp vanilla extract

Chocolate coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a large bowl mix together your truffle filling ingredients.
  2. Roll dough into ~10 evenly sized truffles on a lined sheet pan.
  3. Put truffles into freezer while you make your chocolate coating.
  4. Melt together chocolate and coconut oil. I recommend doing this on the stove top but the microwave also works.
  5. Dip each truffle in chocolate until evenly coated. Put truffles back in the freezer for 15-20 minutes.
