Lentil Burrito Bowl with Avocado Crema

Burrito bowls are one of my favorite meals. When I was in college I used to go to Chipotle multiple times a week, embarrassingly enough. Now I am not a fan of Chipotle but burrito bowls are still my go to meal. This lentil burrito bowl with avocado crema is one of my favorite burrito bowl recipes.

I made the taco meat for this burrito bowl from mushrooms and lentils. This gives a "meaty" texture, plus sneaks in some extra veggies to this meal. The lentils add a healthy boost of plant protein to this meal as well. I've been obsessed with avocado crema lately, and it goes great as a topping with this burrito bowl. The vegan yogurt in the crema also adds healthy fats and gut healthy probiotics. Quinoa or rice is a great side for this bowl but you could swap out greens or whatever you want!

This meal is pretty easy to make and just requires 20 minutes on your stove plus 5 minutes to prep the sauce. The burrito bowl makes 2-3 servings so it is a great meal prep option or a good meal to share.

This makes enough for 2-3 burrito bowls

Lentil Taco Meat

  • 1/2 onion - finely chopped
  • 2 cloves garlic - minced
  • 1 jalapeno - finely chopped
  • 1 bello pepper - roughly chopped
  • 1-2 cups finely chopped mushrooms
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp soy sauce
  • 1 cup cooked lentils (can use canned or sub black beans)
  • 1/4 cup salsa
  • salt/pepper to taste

Avocado Crema

  • 1 avocado
  • 1 clove garlic
  • 1/2 tsp salt
  • juice from 1 lime
  • 1/4 cup vegan yogurt

+ optional sides of quinoa or rice

Instructions

  1. Heat oil in a skillet over medium heat. Add onion and cook for 5 minutes. Add pepper and jalapeno and cook for 5 more minutes. Add all remaining ingredients except for lentils and salsa, and cook for 5 more minutes. Lastly add lentils and salsa and cook for 5 more minutes. Set aside.
  2. Blend together avocado crema in a food processor or blender. If you don't have a food processor or blender you can do this by hand.
  3. Serve taco meat with crema and sides of choice.
