Vegan Cinnamon Roll Bread

Chocolate will always be my favorite dessert flavor, but cinnamon is a close second. When I was craving cinnamon the other day I came up with this cinnamon roll bread and it did not disappoint. I may or may have not eaten 3 pieces in one sitting.

This cinnamon roll bread is perfect when you are craving cinnamon desserts. It is made in one bowl with good for you ingredients. I love my sweet desserts but I like to use the healthiest ingredients I can without sacrificing taste or flavor. In this instance I used oat flour and almond flour for fiber and blood sugar balancing fats and minimal unrefined sugar for sweetness.

Ingredients

Scale

Wet

  • 2 flax eggs (2 tbsp ground flax + 5 tbsp water)
  • 1/2 cup applesauce
  • 1/2 cup milk (I used soy)
  • 2 tbsp melted coconut oil
  • 1/2 tsp vanilla extract
  • 1/2 cup coconut sugar
  • 2 tbsp maple syrup

Dry

  • 1 tbsp cinnamon
  •  1 1/2 cups + 2 tbsp oat flour
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp arrowroot powder/starch or cornstarch

Glaze

  • 2 tbsp melted coconut oil
  • 4 tbsp coconut sugar
  • 2 tsp cinnamon

Instructions

  1. Make your flax eggs by mixing flax and water. Set aside refrigerated for 10-30 minutes.
  2. Preheat oven to 350 degrees.
  3. Mix together your wet ingredients until smooth. Pour in dry ingredients and mix until just combined.
  4. Mix together your glaze ingredients in a separate bowl until smooth.
  5. Pour half of the batter into a lined or silicone baking dish. Pour half of the glaze on the batter, spreading it semi evenly. Pour in the remaining batter and top with the remaining glaze.
  6. Bake for 45-50 minutes or until a toothpick comes out clean. Let cool, slice and serve.
