It is funny I went years of my life without eating chia seed pudding and now I can not get enough of it. I love how easy and customizable it is. Plus, chia seed pudding is a healthy way to satisfy my sweet tooth. A lot of people complain that they do not like chia seed pudding because of the texture, and I get that. This chocolate chia seed pudding is blended so there is no bumpy texture.

Like all chia seed puddings, this chocolate chia seed pudding is super easy to make. All you do is add all the ingredients to a blender and blend until smooth. The only variance in this recipe is the type of milk you use and how much maple syrup you use. I personally love pistachio milk, and one tablespoon of maple syrup was sweet enough for me but you do you.

This chocolate chia seed pudding is a great healthy snack, dessert or breakfast. It can easily be prepped the night before making your morning a breeze. I personally had mine as a mid afternoon sweet snack and it totally hit the spot. I recommend topping your pudding with cacao nibs for some crunch. Fresh fruit would also be a great addition.

This pudding is packed with healthy fats and fiber from the chia seeds. Healthy fats are so important for our brain function and energy levels. Chia seeds also pack protein.   • 1/4 cup chia seeds
  • 1 cup plant milk
  • 1/2 tsp vanilla extract
  • 1 tbsp cacao
  • 1-2 tbsp maple syrup (depends on how sweet you want it)

Instructions

  1. Add all ingredients to a blender. Blend until smooth.
  2. Pour pudding into a glass or jar. Refrigerate for 1 hour or overnight.
  3. Add your favorite toppings and enjoy.
