I love burgers year around, but there is something about a good (veggie) burger in the summer! Veggie burgers are great because the flavor is so customizable. I made these chili lime sweet potato burgers because chili lime sounded summery to me, and I absolutely love sweet potatoes.

These chili lime sweet potato burgers are my latest veggie burger obsession. The sweet potato adds the best flavor, plus a sneaky serving of vegetables! Oats and black beans give these burgers a satiating protein and fiber punch, keeping you full for hours. All of the spices and herbs in these burgers add flavor and extra antioxidants.

This recipe makes four burgers, so it is a perfect meal prep option. These burgers keep well in the fridge for a few days, or they can be stored in the freezer for an extended period of time.

This recipe makes 4-5 burgers

  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 1 can black beans - drained
  • 1 cup mashed sweet potato
  • 1/2 cup parsley or cilantro - finely chopped
  • 1 cup oats
  • 1/2 red onion - finely chopped
  • 3 garlic cloves - minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 pinch cayenne
  • juice from 1 lime
  • 2 tbsp soy sauce
  • 1/2 tsp maple syrup
  • salt/pepper to taste

Instructions

  1. Make your flax egg by mixing flax and water. Let sit refrigerated for 10-30 minutes.
  2. Add black beans to a bowl and partially mash using a fork or potato masher. All all remaining ingredients to the bowl and mix.
  3. Form 4-5 evenly sized burgers.
  4. Roast burgers for 35-40 minutes.
  5. Add burgers to a toasted bun with your favorite toppings.
