- 1-2 tablespoons butter
- 1 bunch asparagus - tops cut off and then finely sliced remove the tough bottom first
- ~.5 pound shrimp this is about 18-20 small shrimp or about 12 normal
- 3 cloves garlic
- juice from 1-2 lemons Adjust to how lemony you want the dish
- zest from 1 lemon
- ½ cup dill - finely chopped
- ⅓ cup grated parmesan
- 2 cups cooked orzo
- 1 tablespoon olive oil
Add butter to skillet over medium heat. Add asparagus along with a pinch of salt and pepper, cook for 4-5 minutes.
Push asparagus to the side and add shrimp along with another pinch of salt and pepper, cook for 90 seconds on each side.
Add lemon, lemon zest and garlic to the pot. Stir to combine and cook for another 60 seconds.
Add all remaining ingredients to the pot, stir until fully combined. Remove from heat and serve.
