Ingredients
- 2 flax eggs (2 tablespoons ground flax seeds + 5 tablespoons water)
- 1/2 cup apple sauce
- 1/2 cup milk (i used almond milk)
- 2 tablespoons oil of choice
- 1 teaspoon vanilla
- 1/2 cup coconut sugar
- 2 tablespoons maple syrup
Dry
- 1 1/2 cups oat flour
- 1 cup almond flour
- 1/4 cup cacao powder
- 1 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon arrowroot starch or corn starch
Frosting
- 1/4 cup melted coconut oil (do not sub)
- 2/3 cup thick vegan yogurt (coconut is best)
- 6 strawberries (tops cut off)
- 1 teaspoon vanilla extract
- 2-4 tablespoons granulated sugar
- 1 1/2 cups raw cashews (soaked for at least 2 hours)
Instructions
- Make your flax eggs by mixing flax and water. Set aside refrigerated for 10-30 minutes.
- Preheat oven to 350 degrees.
- Mix together your wet ingredients until smooth. Pour in dry ingredients and mix until just combined.
- Pour batter into a lined 8x8 baking dish.
- Bake cake for 35-40 minutes. Let cool completely, for about 30 minutes.
- Add all frosting ingredients to a blender and blend until smooth.
- Top cooled cake with frosting. Refrigerate again for about 15-20 minutes so the frosting sets. Top with fresh chopped strawberries if desired.
