Snickerdoodle Crack Bars
I finally purchased a real big girl camera. Months went by of me putting it off and agonizing on my decision, but I think I made the right choice! This recipe is my first post featuring a photo taken with my new camera and I am so happy how it turned out.
Back to the food - I have been craving a cinnamon dessert. I didn't have the strength to test and retest a baked good so I went with a no bake treat. These snickerdoodle crack bars are a perfect expression of cinnamon. I mixed cinnamon in the cookie layer as well as the caramel layer and it came out divine.

Ingredients
Cookie Layer
- 1 ½ cups + 2 tbsp oat flour
- 2 tsp cinnamon
- ½ cup coconut sugar
- ½ cup melted coconut oil
- ¼ tsp vanilla extract
- pinch salt
- 1 tbsp vegan yogurt (adds snickerdoodle tang)
- 1 tbsp maple syrup
Caramel Layer
- ½ cup melted coconut oil
- 1 cup almond butter (or sub seed butter if sensitive to nuts)
- ½ tsp cinnamon
- 1 tsp vanilla extract
- ½ cup maple syrup
Chocolate Layer
- 1 ½ cups chocolate
- ½ tbsp coconut oil
+ optional flaky sea salt
Instructions
- Mix together your cookie ingredients. I used my hands to really get it combined. Press dough into a lined 8x8 baking dish. Freeze for 10 minutes.
- Mix together your caramel ingredients. Pour over cookie layer and freeze for 15-30 minutes or until it has hardened.
- Melt together chocolate and coconut oil. I personally microwaved mine for about 30 seconds. Pour chocolate over caramel layer. Freeze for 10-15 more minutes.
- Cut bars into slices and serve. These can be stored in the fridge for ~5 days or the freezer for months.
