Chocolate chip cookies are a classic dessert, and one of my favorites. Sometimes though you don't feel like making a full batch. That is where this healthy and vegan single serve chocolate chip cookie recipe comes to the rescue.
I have never had a levain style cookie, but I imagine that this cookie tastes very similar. It has a crispier outside and a soft gooey inside. It is big enough to share but I doubt you will want to, it is delicious!
This single serve chocolate chip cookie only requires 6 ingredients and about 20 minutes to make. All you need is one bowl and a sheet pan, so there is minimal cleanup. The ingredients are as healthy as can be too. I used oat flour and almond butter for blood sugar stabilizing properties. No vegan egg is required here either, the combination of almond butter and a splash of milk holds these cookies together nicely. If you want to lighten up the recipe further try using sugar free chocolate chips, I used the Lily's Sweets brand.

Thank you for your sweet comment Laynee!
I made this cookie in my toaster oven and it turned out great. It was super easy to make and tasted yummy. I only had crunchy almond butter on hand which made it, well, crunchier but still delicious! I will definitely make this again. Thank you!
Thank you Amy!
