Tried this recipe this weekend, I really like it! I made it for my son. I used a hand blender and ended up using 2% fat cottage cheese. I used individual dessert dishes to freeze it, grab and enjoy! Thank you for sharing this recipe!

Can granulated monk fruit be used instead of honey?
Kristi says
I think so, it might alter the texture though so you may need to play around with it

Can you add protein powder to this?
Kristi says
I think so but I wouldn't do pea protein, it will make it too thick and gummy
Mark says
Made as written...but added some pecans w the dates before second blend. Loved it....and love it even more as a chilled thick pudding rather than ice cream, though that too is good, if a bit gritty. Works fab as a chilled filling/frosting for gluten free cakes/muffins...which i also make w date paste instead of sugar. Thanks!!

I made this for the first time yesterday. I have to be honest, I was skeptical. I hate cottage cheese. But this stuff? It’s delicious! I love it. I used maple syrup and otherwise followed instructions as written. I plan to make another version with fruit. Does it taste exactly like ice cream? No. But it’s 100% a creamy frozen treat with a delicious flavor that will scratch the itch if you’re looking for ice cream, but want something far healthier. There is bit of a mouth coating feel from the cottage cheese. It doesn’t bother me but it is just inherent due to the ingredients. I’ve seen some other people mention using part of an avocado to add to the creaminess. I haven’t tried that yet, but may give it a shot. Others have also mentioned, it is quite difficult to scoop out once frozen. This is true! Set it out on the counter for about 15 minutes prior to serving and that helps. Thank you for sharing. Such a wonderful delicious recipe.

Phenomenal and easy! This is my 2nd time making this. Both times
I added salted cashews and/or sliced almonds to it. This beats store bought ice cream hands down! I cannot wait to show my daughters kiddos. They are our finicky eaters.
Kristi says
Thanks Linda!

Can you use low-fat cottage cheese? Will it still come out?
Kristi says
I recommend full fat as it will be creamier but some readers have had success with low fat!
Dawn says
I’m making this for the third time and I also subbed maple syrup for the honey. It’s so delicious, I can’t tell that the dates are not real caramel. My husband is really finicky about anything healthy, but this has been a real hit at my house. I’m making a double batch to share with the neighbors. Thanks Kristi, this is definitely a game changer and I’ll be sharing your site too.

Thanks so much Dawn!!!
Ashley Wengerd says
This was so yummy!! I did maple syrup instead of honey and froze it for 2-3 hours and it was literally perfect! I will be making this more. Thank you very much for sharing!! 😊
Kristi says
Thanks Ashley!
Meredith says
Tried this recipe, replacing the honey with stevia and it turned out delicious! It was difficult to scoop out once frozen though, so I plan to keep in the refridgerator. Highly recommend this recipe, easy, scrumptious, and a healthier version of real ice cream. Thank you so much for the recipe! Cheers!
Kristi says
Thanks Meredith! If you let the recipe thaw out for 30 minutes or so it will soften and regain the ice cream like texture.
Brad Markell says
Excellent. Thank you 😊. The first time I attempted the recipe without knowing exactly increments, I added too much salt, and not enuff honey and added avocados, and blended dates too much before softening, but next time, I'll follow her recipe.

Thanks Brad!
