These roasted crispy white beans with garlic and thyme are a delicious and high protein snack.


  • 1 can white beans - drained and patted dry
  • 1 tbsp oil of choice (I like avocado)
  • 1/2-1 tsp salt (adjust to your preference)
  • black pepper to taste
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • 1/2 tsp garlic powder


  1. Preheat oven to 425 degrees.
  2. Add white beans to a sheet pan lined with parchment paper. Toss with oil, garlic, salt, pepper and thyme.
  3. Roast beans for 25-35 minutes. I personally roasted mine for 35 minutes but if you have a hot oven you may need to go to the low end.
  4. Eat beans as a snack, or use as a salad or bowl topper.
